CHOCOLATE CLUSTERS

Only 3 ingredients, no baking required and they don't take much prep! You may add half a cup of trail mix nuts and dry fruit to enhance the recipe.

Ingredients

  • 4 ounces semi-sweet chocolate, chopped (about ⅔ cup)
    ¼ cup (½ stick) unsalted butter
    2 ½ cups cornflakes cereal

Preparation

  • Combine chopped chocolate and butter in a bowl.
    Set over a pot of simmering water.
    Stir the ingredients for around 5 minutes or until melted.
    Remove bowl from heat.
    Add cornflakes and stir to coat all of the cornflakes in chocolate.

    Using a large soup spoon or an ice cream scoop, portion the chocolate covered cornflakes into cookies and place on your prepared baking sheet.

    Cover the cookies with plastic wrap and gently press down on each cookie to pack.
    Refrigerate or freeze for about 30 minutes, or until set, before serving. To keep, cover and refrigerate for up to a week or freeze for up to a month. These are good straight from the fridge or just a few minutes out of the freezer.
