CARROT CAKE

Cooking time: 45 minutes
Totaltime: 1 hour 15 minutes

Ingredients

  • 4 eggs
    1 cup light brown sugar
    3/4 cup canola oil
    1 cup flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1 1/2 cups carrot, shredded
    1/2 cup crushed pineapple, drained
    1/4 cup walnuts, chopped

Preparation

  • Preheat oven to 350 degrees F. In an electric mixer, beat eggs well. Add sugar, oil, flour, soda, salt, baking powder and cinnamon.
    Add carrots, pineapple and nuts.
    Pour into well greased 9 inch square pan.
    Bake 40 45 minutes. Frost with a vanilla cream icing or a cream cheese frosting.
